For this specific Druif, we macerated Chardonnay grapes for almost seven months on two and three-almost-four-year old lambik. The lambikken originate from five different barrels and eight different brews, of which the oldest was brewed in the winter of 2018. The weighted average age of this blend is therefor almost 30 months. The final fruit proportion is 500 grams of grapes per litre of Druif. The grapes are coming off a field in Limburg, Belgium. Of the grains that we used for the brew, about a quarter was sourced within our own cereal collective.
